Crispy oat biscuits with Parma ham and Domyati cream
Ingredients: • 150 g Domyati • 1 tbsp Greek yoghurt • ½ tbsp lemon juice • sage, nutmeg and freshly ground black pepper • 1 tbsp finely chopped parsley • 8 slices of Parma ham • 100 g watermelon balls • 100 g finely sliced romaine lettuce • 8 crispy oat biscuits: • 50 ml oats • 150 ml water • a pinch of salt Directions: Mix the Domyati with the Greek yoghurt and lemon juice and season with the sage, grated nutmeg, ground black pepper and finely chopped parsley. Bring the oats and the water to the boil in a saucepan and add a little salt to taste. Thinly spread the porridge out in small circles on baking paper and bake until crispy in the oven at 110°C for about 30-45 min. To serve, use an oat biscuit as the base. Arrange the finely sliced romaine lettuce and the slices of Parma ham on the base. Using a hot spoon, shape the Domyati cream into egg shapes and place on top of the lettuce and ham. Top with another oat biscuit. Decorate with the watermelon balls.
