Fried halibut with Beyaz Peynir

Ingredients:
• 400 g halibut
• 100 g butter 
• ¼ bunch of dill 
• 100 g Beyaz Peynir
• 50 g butter for frying
• 2 tbsp oil 
• 250 ml good quality apple juice
• 3 red appels
• 1 tsp cardamom
• 1 tsp acacia honey
• salt and pepper

Directions:
Beat the butter until soft and mix with small pieces of Beyaz Peynir and the chopped dill. On a sheet of baking paper, spread the butter out in a thin layer and freeze.
Bring the apple juice, cardamom, honey and salt and pepper to the boil. Cut the red apples into thin wedges and poach them in the seasoned apple juice.
Cut the halibut into pieces weighing approx. 100 g each and turn in seasoned flour. Fry the fish in butter with a little oil. Cut the frozen butter into good-sized pieces and lay them on the hot fish.
To serve, place the warm halibut on the poached apple wedges and decorate with dill.
