Smoked salmon roll with fennel

Ingredients:
• 200 g Domyati
• 260 g smoked salmon 
• 1 fennel
• 1 bunch of chives
• 40 g kumquat
• 1 tbsp lemon juice
• 2 tbsp lemon peel
• 1 tbsp olive oil
• 3 tbsp acacia honey 
• 80 g butter 


Directions:
Roll the thin salmon slices around a stirred cream of Domyati which has been seasoned with lemon juice.
Toss the finely sliced fennel and chives in a marinade of olive oil, salt and lemon peel.
Halve the kumquat and sauté it in a frying pan in butter and honey. Arrange the lukewarm kumquat on a plate together with the salmon roll and fennel salad.
