Filo Pastry parcels with spinach

• 2 tbsp water
• 100 g frozen, whole spinach
• 2 onions (approx. 100 g), finely chopped
• 1 small clove garlic, crushed
• ŧ tsp cumin, crushed
• ŧ tsp salt
• freshly ground pepper
• 150 g Taverna Domyati cheese in small pieces

• 4 sheets frozen filo pastry, thawn (approx. 150 g)
• 50 g butter, melted
• 1 litre lettuce in strips, e.g. cos lettuce
• 100 g fresh mangetout, in diagonal slices
• 100 ml watercress
• sea salt
• freshly ground pepper

Baking time
• ca. 18 min. ved 200ēC

Put water, spinach, onions, garlic and spices in a saucepan and steam over a high heat for approx. 2 min. Leave to cool a little and add the cheese. Season.
Fold our the filo pastry sheets and cover with a damp cloth. Take out a sheet and brush with butter. Place a new sheet on top and press the 2 sheets together. Cut the sheet into 18 squares (ca. 7Ŋ x 10 cm). Place approx. 1/2 tbsp filling on each square and fold tehm - a little sloping. Repeat with the last 2 sheets of filo pastry and the remaining filling. Place the parcels on baking trys lined with baking paper and brush with the remaining butter. bake the parcels in the middle of the oven.
Arrange lettuce, mangetout and watercress on a large serving dish. Place the filo pastry parcels on the salad, sprinkle with salt and pepper and serve at once.

The filo pastry parcels can be served without the salad, as a snack.
