Pasta with green sauce

Ingredients
:

175 g Taverna Domyati cheese
4 tbsp. water
1 tsp white wine vinegar
1 egg yolk, e.g. pasteurized
4 tbsp oil (e.g. olive oil)
1 samll clove garlic, sliced
1 litre leaves of flat-leaved parsley
400 g dried pasta, e.g. spaghetti

Decoration: Flat-leaved parsley
 
Can be served to: Grilled fish, e.g. tuna or salmon
 
Directions:
Cut the cheese into smaller pieces. Put water, vinegar, egg yolk, oil, garlic, cheese and parsley leaves into a blender. Blend until the mixture is smooth - approx. 1 min. Pour the green sauce in a bowl and leave covered in the refrigerator for at least 30 min.
 
Boil the pasta as directed on the package and drain in a sieve. Return the pasta to the hot saucepan and fold in the green sauce. Heat the dish and season. Serve at once.
